Egg-rific Recipes for Lazy Brunch

Having brunch is one of the eating habits of most Americans. Brunch is the combination of breakfast and lunch. This type of meal is popular during weekends when people wake up too late for breakfast but still too early for lunch. Cooking brunch is a crucial responsibility for home cooks because the meal must supply the necessary nutrients for the whole morning and the rest of the day.

During weekends, most people just cook pancakes or fry eggs for brunch. While this would work, it tends to get boring if repeated too often. Why not make your lazy brunches interesting with these recipes?

Egg, Cheese and Sausage Bake

INGREDIENTS:

  • 1 tbsp. butter,  unsalted
  • 1 1 /2 Swiss Cheese, about 6 ounces, grated
  • 3 hamburgers OR hot dog buns, split
  • ¼ cups fresh flat-leaf parsley, chopped
  • 1 tbsp. olive oil
  • Kosher salt and pepper
  • 1 small yellow onion, sliced
  • 1 cup milk
  • ¾ pound sweet sausage (Italian and no casings)
  • 6 large eggs

INSTRUCTIONS:

  1. Prepare the oven and heat it to 350 degrees Fahrenheit.
  2. In a 9x13inch baking dish, grease the unsalted butter evenly.
  3. The hamburger or hot dog buns should be torn into large pieces. Align them on the baking dish and leave them aside.
  4. In a large skillet, pour oil and heat it over medium-heat. The onion should be added after the oil is thoroughly heated. Another 1 minute of cooking is required.
  5. The sausage meat should be added in cooking. Using a wooden spoon, break the sausage meat apart. Make sure that no pink traces can be found after. Cooking the sausage would need another 10 minutes.
  6. The eggs, milk, ¼ teaspoon pepper and ½ teaspoon salt should be stirred together in a large bowl. Eventually add the following ingredients in the bowl: onion, cooked sausage, 1 cup cheese and chopped parsley.
  7. Use a spatula or spoon while pouring the mixture on the buns, making sure that the bread is submerged completely.
  8.  Get some of the remaining cheese and sprinkle them on the covered buns.
  9. Put the baking dish in the oven and bake for 35 minutes. Wait for the eggs to set.
  10. Serving time should be over 5 minutes.

Basic Quiche (from http://www.realsimple.com)

INGREDIENTS:

  • 1 9-inch pie crust, refrigerated
  • 4 cups mixed greens
  • 2 tablespoons olive oil
  • 8 ounces Gruyere, grated
  • 2 medium onions,  chopped
  • 1/8 teaspoon ground nutmeg
  • Kosher salt and black pepper
  • ¾ cup half-and-half
  • 1 cup fresh flat-leaf parsley, chopped
  • 4 large eggs

INSTRUCTIONS:

  1. Prepare the oven and heat it to 375 degrees Fahrenheit.
  2. Use a 9-inch pie plate to accommodate the pie crust. Get a baking sheet and put the plate on it.
  3. In a large skillet, pour oil and heat it over medium-heat.
  4. The ½ teaspoon salt and onions should be added after.  Cook and stir the contents until the onions become soft. This should take about 5-7 minutes.
  5. Add the parsley in the skillet and stir well.
  6. Combine the eggs, ¼ teaspoon salt, half-and-half and nutmeg in a large bowl. Stir them well.
  7. Pour the Gruyere and the onion mixture in the bowl. Stir the contents until they are thoroughly blended.
  8. Get the crust and pour the egg mixture on top of it.  Spread evenly.
  9. For 35-40 minutes, bake the crust. One way to test if it is already cooked is inserting a knife in the center. If it comes out clean, then it is ready to be served.
  10. After removing it from the oven, wait for another 5 minutes.
  11. On plates, arrange the chopped parsley and drizzle them with ¼ teaspoon salt and ¼ teaspoon pepper.
  12. Put the quiches on the plates and serve.

Dried Cherry Popover

INGREDIENTS:

  • 1 tablespoon butter, unsalted and melted
  • ½ cup dried cherries
  • 3 large eggs, beaten
  • 1 ¼ cups whole milk
  • 1/3 cups plus 1 teaspoon sugar, granulated
  • ¾ all-purpose flour

INSTRUCTIONS:

  1. Prepare the oven and heat it to 375 degrees Fahrenheit.
  2. Get a 2-quart baking dish and grease the sides and bottom with butter.
  3. Whisk 1/3 cup sugar and the eggs inside a bowl. Add flour and continue to stir until you have a smooth mixture.
  4. The melted butter and milk should be stirred in.
  5. In the prepared baking dish, pour the batter.
  6. Get the cherries and spread them on top of the batter evenly.
  7. The remaining sugar should also be sprinkled on the batter.
  8. For 45 minutes, bake the batter.
  9. Wait for it to turn golden and puffed before removing the dish from the oven.

Having brunch should not sacrifice the nutrients needed for breakfast and lunch. Make sure to pack a lot of protein and carbohydrates during brunch so you will not get short on energy until supper.
